Eric Gutknecht, the owner and CEO of Charcutnuvo, an organic and natural sausage brand based in Denver, CO, is deeply committed to community impact.  The  team at Charcutnuvo focus on regenerating farm and ranching land to its natural state, alongside philanthropic efforts aimed at enhancing the lives of Denver’s residents. With a strong emphasis on regenerative agriculture, Eric collaborates with ranchers and farmers to restore our land to its pristine condition.

Eric’s journey began as a fourth-generation sausage maker in Switzerland before he relocated to Denver during his formative years. As a proud graduate of Denver’s Manual High School, Eric has consistently championed support for the city’s most challenged student population. For over 12 years, he has served as a dedicated board member of Denver Kids (denverkidsinc.org), primarily focusing on fundraising initiatives. Additionally, Eric holds the position of board chair for the Colfax Marathon, a non-profit organization that annually contributes over $100,000 to community-based causes.

Wish for Wheels aligns perfectly with Eric’s passions. As a lifelong cyclist and competitive triathlete, he purchased his first race bike in the seventh grade and has been hooked ever since. Eric’s free time revolves around planning Race-Cations and competing in world championship triathlon events across the globe.  Notably, he has twice participated in the Ironman World Championships in Kona, as well as the Olympic Distance and Long Distance World Championships in Spain and the Netherlands.  As the reigning national champion for long distance, Eric plans to chase a world championship podium at his next big race in Australia this summer.  In the Gutknecht household with his fiancé, Amy, bikes abound, and Eric hopes that his work through Wish for Wheels will ignite a similar passion for cycling among Denver’s children and the surrounding communities.
